Buffalo N.Y. Style

We introduced this sauce in the fall of 2018. Made with red tepin chilies, epazote, limes, chipotle powder, smoked paprika, garlic, cayenne and tabasco peppers, this sauce pays homage to my Buffalo N.Y. roots and was primarily cooked up to bring to our tailgate parties during the Buffalo Bills games we attend with our U.S. cousins. A lot of little “mom and pop” sub and wing joints in Buffalo make their own “family secret” specialty sauces and we enjoy them to the max when we visit, and of course, inquire about the ingredients. This is our take on them. Adds a lot of pizzazz to wings!
