Niagara Vineyard Style

Mariana and I often go the Niagara’s wineries and enjoy a weekend break. We were sitting at one such winery in the fall of 2021, enjoying a glass of wine when I noticed we were surrounded by acres and acres of grape vines, all loaded with the autumn harvest of fruit.
We decided to make a sauce that uses these beautiful grapes and pays homage to this beautiful piece of Ontario. Be warned though, this is a deceptive sauce. Along with local concord grapes we blend in Trinidad Scorpion Moruga peppers so the first taste is like a sweet grape jam or drink and then the fire hits!
